Cheddar-Jalapeno Blue Cornbread combines the sweet indigo hue of blue cornmeal with spicy jalapeno and sharp cheddar for a bold quick bread.
Ingredients
- 2 cup blue cornmeal
- 1 cup all-purpose flour
- 0.25 cup granulated sugar
- 1 tablespoon baking powder
- 0.50 teaspoon salt
- 1.50 cup buttermilk
- 1 large egg
- 3 tablespoon butter, melted
- 1 cup cheddar cheese, shredded
- 2 pic 1 jalapeno, seeded and chopped
Steps
- Preheat oven to 400 F and grease an 8×8 baking dish.
- Whisk together dry ingredients.
- Whisk together wet ingredients.
- Fold in cheddar and jalapeno until just combined.
- Transfer batter to prepared dish and smooth the top.
- Bake for 25 minutes until golden and a toothpick comes out clean.
