Three Sisters Stew with Chorizo adds spicy chorizo to the traditional corn, bean, and squash stew for savory depth and a hint of heat.

Ingredients

  • 1 tablespoon oil
  • 1 cup onion, chopped
  • 2 clove garlic, minced
  • 4 cup vegetable broth
  • 2 cup corn kernels
  • 2 cup beans, cooked
  • 2 cup squash, diced
  • 6 ounce chorizo, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 0.50 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup tomato, diced
  • 0.25 cup cilantro, chopped

Steps

  1. Heat oil and saute onion and garlic until fragrant.
  2. Add broth and corn; bring to a boil.
  3. Stir in beans, squash, chorizo, and spices; reduce heat and simmer.
  4. Add diced tomato and continue cooking until vegetables are tender.
  5. Garnish with chopped cilantro and serve warm.
