Ingredients
- 2 tablespoon oil
- 1 cup onion, chopped
- 2 clove garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoon tomato paste
- 1.50 cup tomato puree
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 0.50 teaspoon curry powder
- 1 teaspoon salt
- 2 cup long-grain rice
- 3 cup water
- 1 cup peas
- 1 cup carrots, diced
- 0.25 cup green onion, sliced
Steps
- Heat oil in a pot over medium heat and sauté onion, garlic, and ginger until fragrant.
- Stir in tomato paste, tomato puree, paprika, dried thyme, curry powder, and salt; cook until oil separates.
- Add rice and water; bring to a boil.
- Cover, reduce heat, and simmer until rice is tender, about 20 minutes.
- Stir in peas and carrots; cook 5 minutes more.
