Butter Chicken is a creamy, spiced curry of tender chicken pieces simmered in a rich tomato and butter sauce flavored with garam masala, ginger, and garlic. Finished with a touch of cream and fresh cilantro, it balances savory and tangy notes for a comforting meal. Serve with rice or naan to soak up every drop of the luscious sauce.

Ingredients

  • 1 pound chicken breast, cut into 1-inch pieces
  • 0.50 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1.50 teaspoon garam masala
  • 0.50 teaspoon ground turmeric
  • 0.50 teaspoon chili powder
  • 1 teaspoon salt
  • 1 tablespoon oil
  • 2 tablespoon butter
  • 1 cup onion, finely chopped
  • 2 clove garlic, minced
  • 1 tablespoon ginger, minced
  • 1.50 cup tomato puree
  • 1 teaspoon paprika
  • 0.50 cup heavy cream
  • 0.25 cup cilantro, chopped

Steps

  1. Marinate chicken: combine chicken with yogurt, lemon juice, and spices; let rest 10 minutes.
  2. Sauté aromatics: heat oil and butter; cook onion until translucent, then add garlic and ginger until fragrant.
  3. Build sauce: stir in tomato puree and paprika; simmer until slightly thickened.
  4. Cook chicken: add marinated chicken and any juices; simmer until chicken is cooked through, about 10 minutes.
  5. Enrich sauce: stir in heavy cream and butter; simmer 5 minutes until sauce is creamy.
  6. Finish and serve: sprinkle garam masala and cilantro over the curry; serve hot.
