Ingredients

  • 1.50 pound pork shoulder, cubed
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 0.50 teaspoon black pepper
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cup chicken broth
  • 2 can hominy, drained and rinsed
  • 2 can posole chiles, drained and chopped
  • 1 teaspoon ground cumin
  • 0.50 teaspoon dried oregano
  • 0.25 cup cilantro, chopped
  • 0.50 cup cabbage, shredded
  • 0 1 lime, cut into wedges
  • 0.25 cup radish, sliced

Steps

  1. Brown pork: heat oil in a large pot over medium heat and brown pork cubes; season with salt and pepper.
  2. Saute onion and garlic until translucent.
  3. Add broth, hominy, and posole chiles; bring to a simmer.
  4. Simmer uncovered until pork is tender, about 75 minutes.
  5. Season to taste and serve with garnishes.
